Stuffed Portobello Mushrooms

In a hurry, but want something fresh and filling? These stuffed portobello mushrooms are the perfect choice for a quick lunch or great for accompanying a main course for dinner. They can even be thought of as mini healthy pizzas. We were salivating over these before they even started to look like anything; the fresh basil and garlic created a heavenly aroma in the kitchen that kept us anxiously waiting for the timer to ring for these babies to be done.

Ingredients:

4 Portobello Mushrooms
4 Large Tomatoes
4 Cloves of Garlic
1 Lemon
1 Onion
1 Leek
Fresh Basil
Parmigiano cheese
Fresh Parsley
Olive Oil

Directions:

1. Heat up 2 tablespoons olive oil in a sauce pan.
2. Chop the onion.
3. Add onion to the sauce pan and stir until slightly brown
4. Dice the tomatoes, chop the garlic and leeks.
5. Add tomatoes, garlic and leeks to the onions. Saute the ingredients until the tomatoes are soft.
6. Squeeze about 1 tablespoon of lemon juice over the ingredients
7. Add about 5 leaves of chopped fresh basil
8. Add olive oil to a baking sheet and place the mushrooms on top.
9. Add the mixed ingredients from the sauce pan into each mushroom and top with parmigiano cheese. Place the baking sheet into preheated oven and bake for 12 minutes at 400F.
10. Sprinkle with fresh chopped parsley (if desired).


 Can't go wrong with fresh ingredients
